Food

A couple days ago I spotted a large tub of dates at Costco and remembered that I had been wanting to try this recipe for homemade Larabars. I love larabars because they are tasty, and because they have no sugar or weird stuff added...just fruit and nuts. However, they are a bit pricey. Anyways, I made a Cherry Pie bar and a Key Lime bar and they turned out really well.This is Key Lime Pie.


Lia loves them. I think I will call them Liabars.While getting ingredients at the store, I saw these. Couldn't resist.

Crumpets could only mean one thing...time for a picnic. We had it on the balcony when Lia got home from preschool (I'm still recovering from the thin black snake). Crumpets with butter and strawberry freezer jam, grapes, sharp cheddar cheese, and cherry pie liabars for dessert.

Just after I shot this picnic photo Eden started to get a little fussy in the wrap. I pulled her out and started to sit down to join in the feast and Eden spit up. The I-ate-more-than-my-tummy-can-comfortably-hold kind of spit up. And by that I mean a lot. Mostly on herself and me, with a tiny bit on the blankets. At least she missed the food. Not to be left out, Lia started gagging and "spit up" a little bit too, which she was very proud of. After a moment of panic I stripped Eden down, cleaned her up, then let her kick around (diaperless and happy!) in the clean blankets while Lia and I ate. Eden was delighted to be free from the clutches of the diaper, Lia was proud of her new trick, and I was relieved to eat a meal where everyone else was happy. :)

I love Key Lime. give me a piece of key lim cheesecake and I'm happy. must try those bars now. they gotta be good for preggo people right?

and Lia's new trick? hopefully she doesn't do it all the time. I don't think that will make for a happy mommy at all.

Mmm! What did you add to make the key lime flavor?

For the key lime bars I reduced some lime juice by boiling for a few minutes, until it reached a syrupy consistency. I whirled the dates in the food processor, then added almonds and cashews, unsweetened coconut, and the lime juice. I didn't measure things, just threw stuff in and tasted until I liked it.

Yes, those bars are good for preggo women, but so is a slice of key lime cheesecake. :)

Crumpets, yum! I used to eat crumpets with butter and vegemite everyday when I was pregnant..I wonder if that's why my daughter LOVES vegemite so much. Ever tried it? It might just be an Aussie thing...:o) I can't remember if you can get it in the states though...
