Whole wheat banana bread

Firstly, I am thinking about switching to Typepad. Is it worth it?

Secondly, I made this bread today and it is excellent. Not only is it made with whole wheat, but it's sweetened with honey instead of sugar. Slather some butter on top (though it's great plain) for a snack, or smoosh peanut butter and banana slices between two pieces for a delicious lunch. Lia's review, "I really like it mom!" It's moist without being oily, just sweet enough, with a warm, nutty flavor. Perfect for fall.

Honey-Sweetened Whole Wheat Banana Bread
adapted from this recipe

INGREDIENTS

  • 1/3 cup butter (could substitute applesauce)
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup mashed bananas
  • 1 3/4 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1/4 - 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 cup hot water
  • 1 handful chopped walnuts
  • 1 handful chocolate chips

DIRECTIONS

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a large bowl, beat butter and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour, cinnamon, and salt.
  3. Add baking soda to hot water, stir to mix, and then add to batter. Carefully stir in chopped nuts and chocolate chips. Spread batter into a greased 9x5 inch loaf pan.
  4. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

A lurker here, but I would not switch to typepad. Ever since their "upgrade" it's been horrible to work with. As a paying customer, I'm really disapointed in TP.

thanks for another yummy recipe. i am 'decrapping' my kids off non-organic, non-full of crap stuff! lol. we made some of your corn salad to have with dinner (added black beans!) and they devoured it!

please keep sharing!! i love everything! :]

Well ok, so it sounds like switching is a bad idea. $100 a month tara! yikes!

hmmm. i have typepad. i pay 8.95 a mo which gives me the option of having essentially 3 blogs. i think i went w this option bc originally it was the one that let you do a fancy banner. the one blog option is 5.95 a mo. or it used to be. and i think a big diff between the two used to be the ability to have a fancy banner. but i think blogger lets you do that now too. i'm able to make my pics really big in typepad if i want. i've never had blogger, but i've tinkered w it recently for a friend. i think they're actually pretty similar. i do like that typepad keeps viewer stats for you and lets you see where you're hits are coming from. i don't think you get that w blogger. but overall, really about the same.
